Chickpea & vegetable stir fry with root puree
Chickpeas are one of my favorite legumes! You can prepare so many tasty dishes with them. They are mostly known for hummus, which is a traditional spread eaten with flatbread, crackers, or some veggies. But this time I prepared the recipe for chickpea & vegetable stir fry with root puree.
This recipe is so simple, easy, and very delicious.
What is stir fry?
Stir fry is usually fried vegetables with some kind of protein in a little bit of oil. The veggies should be cooked but also golden brown. This is a perfect dish for an easy lunch or dinner.
In this recipe, you will need to do is to cook vegetables, greens, chickpeas, and add some seasonings.
Stir fry is mostly served with rice or noodles, but I served it with creamy and delicious root puree.
Let's make this delicious chickpea & vegetable stir fry with root puree
First, you will need to chop all the veggies, so it is easier to prepare this recipe.
For a stir fry, you will need:
- red bell pepper
- celery
- coconut oil
- swiss chard
- parsley
- cooked chickpeas
- basil
- salt
- black pepper
- garlic powder
Preheat a large skillet over medium meat and cook the veggies into coconut oil until crispy and golden. When the veggies are done add greens and seasonings. Stir until all the flavors are combined.
Next, let's prepare creamy root puree.
Cook carrots, parsnip, and sweet potatoes in a larger pot until soft. If you chop them into small pieces, you can have them done sooner. Usually, it takes about 10 minutes.
When the roots are completely cooked, drain them from the water and blend with a hand blender. Add plat milk, vegan butter, and salt.
Serve with fresh veggies, root puree, and stir fry. You can add smoked tofu on top. Enjoy!

CHICKPEA & VEGETABLE STIR FRY WITH ROOT PUREE
Ingredients
Veggie stir fry
- 1 red bell pepper
- 1/2 cup chopped celery
- 1 tbsp coconut oil
- 1 cup swiss chard
- 1/3 cup parsley
- 1 cup cooked chickpeas
- 1/2 cup basil
- 1/2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
Root puree
- 1 carrot
- 2 parsnips
- 2 sweet potatoes
- 1/2 cup plant milk
- 2 tbsp vegan butter *optional
- 1/2 tsp salt
Instructions
- First cook red bell pepper and celery with coconut oil, add water and cook for 10 mins. Later add swiss chard, parsley, and chickpeas and cook for another 5 minutes. Lastly, add fresh basil and spices.
- Meanwhile, chop the root vegetables into small pieces and cook for about 10 minutes in salted water. When the veggies are completely cooked, drain them from the water and add plant milk, butter, and salt.
- Serve with fresh veggies and smoked tofu. Enjoy!
