Creamy coconut millet porridge - naturally gluten-free
Millet is just so amazing. You can prepare many delicious dishes with it, including sweet or savory. Cook it with a little bit of salt to make such a tasty side dish or cook it with sweet dates to create this creamy coconut millet porridge, which is naturally gluten-free.
There are no limits when cooking with millet, because of its taste. It has a really wonderful slightly sweet but neutral taste. This makes millet so amazing and wonderful in many recipes.

Did you know that millet is naturally gluten-free? Just like rice, sorghum, or amaranth. That's why millet is one of my favorite ingredients.
Millet is just amazing. You can cook it with sweet or savory dishes or you can blend it into flour, so you can bake cakes, pies, or cookies.
Because of its neutral taste, you can use it almost in any recipe. I personally love fluffy millet as a side dish in savory recipes.
But this time I prepared creamy coconut millet porridge. I'm a porridge person and I cannot imagine a morning without a warm bowl of porridge. Especially in cold weather. So if you want to try something new for breakfast, try this recipe.
This is how you can make this creamy coconut millet porridge
The main ingredient for this amazing creamy coconut millet porridge is millet, obviously.
You can add whatever flavors into your porridge, but in this recipe, I used coconut. In the combination of millet, it creates such a delicious creamy texture and taste.
The first step is to wash your millet a few times. Millet might be bitter sometimes, so it is better to wash it clean until the water is clear.
The next step is to prepare a pot with all of your ingredients, besides vanilla. I love to add vanilla at the very end, so the flavor is stronger a better.
Cook your millet in soy milk, add in dates as a natural sweetener, and coconut.
Another very amazing thing I love about millet is cooking time. Millet is done in 10 minutes, which is awesome! You can have a wonderful breakfast done in a few minutes. How awesome is that?
Bring the porridge to the boil, cover the pot and cook for 10 minutes.
The next step is totally optional, but I love to have a creamy porridge, so I used a hand blender and blended the porridge until creamy and fluffy.
The last step is to add vanilla and we are basically done.
Serve this creamy coconut millet porridge with fresh fruit and shredded coconut on top. Enjoy.

Ingredients
Coconut millet porridge
- 80 g millet
- 300 g soy milk
- 5 dates
- 1 tbsp shredded coconut
- 1 tsp vanilla
Toppings
- Berries
- Shredded coconut
Instructions
- First, wash the millet in the water a few times, until the water is clear.
- Put the pre washed millet into a pot along with soy milk, dates, and coconut.
- Cook for 10 minutes and if needed add a little bit more soy milk, depending on what kind of consistency you want.
- Lastly, add in vanilla and blend with a hand mixer until smooth and extra creamy.
- Serve with fruits and shredded coconut.
