For this recipe, you will need only one bowl. You will need:

  • buckwheat flour
  • rice flour
  • cassava flour
  • baking powder
  • cacao powder
  • a pinch of salt
  • soy milk
  • mashed banana
  • vanilla
  • date syrup

You can also make your buckwheat flour at home easily.

Blend buckwheat groats into a blender until a smooth and flour-like consistency.

Why is buckwheat flour dark?

Buckwheat flour is usually dark because of the roasted buckwheat groats.

Buckwheat flour can be bought in white or brown colors. Brown buckwheat flour has a stronger taste and dark brown color. It is perfect in bread or tortillas. However, if you don't like the taste of buckwheat buy white buckwheat flour which has a neutral taste and nice white color.

How do you make chocolate chip pancakes without burning chocolate?

You can mix the chocolate chips into the batter and cook the pancakes this way, or you can create pancake batter and pour it onto the pan and then add some chocolate chips, but you need to add some more batter to cover the chocolate chips, so they don't burn onto the pan.

  • 1/2 cup buckwheat flour
  • 1/3 cup rice flour
  • 1/3 cup cassava flour
  • 2 tsp baking powder
  • 1 tbsp cacao powder
  • 1 cup soy milk
  • 1/2 mashed banana
  • 1 tsp vanilla
  • 4 tbsp date syrup
  • 1/2 cup chopped dark chocolate *or chocolate chips


  • First, combine dry ingredients which are flours, baking powder, salt, and cacao powder.
  • Next, add in soy milk, mashed banana, vanilla, and date syrup. Create a fluffy batter and lastly add in chopped dark chocolate.
  • Cook each pancake on medium-high heat from both sides.
  • Serve with maple syrup and fresh fruit. Enjoy warm.
