What are gluten-free pancakes made of?

Gluten-free pancakes are usually made of similar ingredients, so just like regular pancakes, only by replacing regular wheat flour with a gluten-free one.

But if you want to make a gluten-free vegan pancakes recipe, you have to omit eggs and sometimes replace them with something else.

However, it all depends on the gluten-free flour you are using. If you are using flour, that needs some type of binding ingredient, you have to replace the egg with a flax or chia egg. But if you are going to use buckwheat flour, you don't even need to add flax meal, because buckwheat flour is stretchy and holds everything together.

INGREDIENTS

For this recipe, you will need only one bowl. You will need:

  • buckwheat flour
  • rice flour
  • cassava flour
  • baking powder
  • cacao powder
  • a pinch of salt
  • soy milk
  • mashed banana
  • vanilla
  • date syrup

POSSIBLE INGREDIENT SUBSTITUTIONS

This recipe is easily customizable. Here are some ideas:

  • You can replace cassava flour with gluten-free oat flour or sorghum flour.
  • Soy milk can be easily replaceable with any type of plant-based milk.
  • You can replace date syrup with agave or maple syrup.
  • You can also add protein powder to the pancakes for some extra protein, so you can create chocolate protein pancakes.

STEP BY STEP INSTRUCTIONS

In a large bowl combine dry ingredients, and add soy milk, mashed banana, vanilla, and date syrup.

Create a smooth chocolate batter and lastly add in chocolate chunks or chocolate chips.

When the batter is ready, cook the pancakes on medium-high heat from both sides. I used a non-stick pan but if you feel like your batter will stick to a pan, just use a little bit of oil or vegan butter.

FAQ

Is buckwheat free of gluten?

It is perfect for gluten-free baking or even cooking. But I highly encourage you to find white buckwheat flour, because it has better taste and white color.

Is buckwheat flour the same as buckwheat?

Yes, buckwheat flour is the same as buckwheat. Buckwheat flour is made by grinding buckwheat groats.

You can also make your buckwheat flour at home easily.

Blend buckwheat groats into a blender until a smooth and flour-like consistency.

Why is buckwheat flour dark?

Buckwheat flour is usually dark because of the roasted buckwheat groats.

Buckwheat flour can be bought in white or brown colors. Brown buckwheat flour has a stronger taste and dark brown color. It is perfect in bread or tortillas. However, if you don't like the taste of buckwheat buy white buckwheat flour which has a neutral taste and nice white color.

How do you make chocolate chip pancakes without burning chocolate?

You can mix the chocolate chips into the batter and cook the pancakes this way, or you can create pancake batter and pour it onto the pan and then add some chocolate chips, but you need to add some more batter to cover the chocolate chips, so they don't burn onto the pan.

You can try both options and see what works for you.

Can you reheat pancakes the next day?

Absolutely yes! Pancakes are perfect even the next day. You can reheat your pancakes on the pan from both sides and you can have delicious pancakes ready to eat.
