Easy baked gingerbread donuts - gluten-free and vegan recipe


Christmas is just around the corner, so we can slowly tune in to the festive atmosphere. Although gingerbread cookies are traditional for Christmas, I decided to make it into easy baked gingerbread donuts, with sweet icing. The full recipe is vegan, gluten-free, and sugar-free.

The batter for these gingerbread donuts is soft, fragrant, and really fluffy. These donuts are really easy to make. You will need just one bowl and mix all of the ingredients.

Making these donuts feels very festive. Gingerbread spice created such a yummy taste and special atmosphere.

You can feel it in the air

Christmas is almost here and I'm sure you can feel it in the air. People are decorating their houses and baking delicious desserts.

This is a time for us to be more kind, friendly, and more open to each other. But this is also a time for us to be more cozy and comfortable in our homes The weather is colder each day and the warm meals are so precious.

Baking something different is a really nice thing. I love creating new recipes. Especially in this festive time.

This is how you can make these easy baked gingerbread donuts

The method is really simple. You will need to combine all the dry ingredients in a larger bowl first.

So prepare a bowl and combine flours, baking powder, baking soda, and salt. This is a base for our gluten-free donuts.

I'm using buckwheat flour and gluten-free oat flour. I love using these flours. The batter is really nice and perfectly fluffy.

So the next step is to prepare a flax "egg". This is a really nice egg replacer. Simple mix flax meal with a little bit of water and wait until it creates gel-like consistency. It usually doesn't take a very long time. Wait a few minutes and you can have a beautiful flax "egg''.

Now, mash dates with a fork and add them into dry ingredients, which we prepared earlier, along with flax "egg", gingerbread spice, lemon juice, vanilla, and water.

Create a creamy batter and you are almost done!

Pour the batter into a donut-shaped baking pan. Do not forget to grease the pan with oil otherwise, they might stick to the pan.

Bake donuts for about 20 mins or until they are golden.

The whole house will smell like Christmas. So keep that in mind.

After baking, feel free to decorate them with sugar icing. I created mine by mixing powdered sugar with a splash of vanilla and soy milk.

Ingredients
  

  • 100 g gluten-free oat flour
  • 100 g buckwheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/3 tsp salt
  • 20 dried dates
  • 2 tbsp flax meal
  • 8 tbsp water
  • 3 tsp gingerbread spice
  • 3 tsp lemon juice
  • 1 tsp vanilla
  • 250 g water

Instructions
 

  • In a larger bowl, mix flours, add baking powder, baking soda, and salt.
  • Next, create a flax "egg" by combing flax meal and 8 tbsp of water. Let it sit for 5 minutes, or until it creates gel-like consistency.
  • Mash dates with a fork and adds them into dry ingredients along with lemon juice, gingerbread spice, vanilla, and water.
  • Mix everything well and prepare a donut pan. Don't forget to grease your pan with coconut oil!
  • Bake the donuts for 20 minutes at 170 °C (340F).
  • After baking, cool them down completely, and feel free to decorate them with your favorite frosting. Enjoy!
