Gluten-free cinnamon star cookies - vegan Christmas recipe
Christmas is just around the corner and I feel like it's the best time for preparing recipes and treats for this wonderful time of the year. I don't know about you but I love to plan things out, so the same thing applies when prepping for Christmas. So that's why I decided, I'm going to post only festive recipes until Christmas. This time I prepared amazing gluten-free cinnamon star cookies, which is also a vegan Christmas recipe.
If you like cinnamon, you will love these cookies. These are so delicious and very easy to make. Actually, you will only need just one bowl to make these.
These gluten-free cinnamon star cookies are perfect for any festive time of the year but mostly Christmas. Cinnamon makes them very fragrant and tasty. The cookies by themselves are a little bit crunchy, sweet, and they melt on the tongue. Just amazing.
You can fool anyone with this recipe. No one will ever know that this recipe is vegan and gluten-free! It is literally so good.
Cinnamon is one of the spices of Christmas
When I smell cinnamon, it makes me feel cozy and special in some way. This is a traditional spice of Christmas as well. Cinnamon can be used in many recipes including cookies, cakes, pies, or much more. But whenever you use cinnamon, we can all agree that it has its unique flavor that makes us feel precious.
Cinnamon is perfect in many combinations, for example with cloves, vanilla, cacao, apples, pears, or with a banana! Have you ever tried to sprinkle some cinnamon on your fruit? It is so delicious!
Cinnamon is also a very healthy spice for us. It has many beneficial factors to keep us healthy and happy.
However, I cannot imagine Christmas without cinnamon and these gluten-free cinnamon star cookies. These little stars are symbols of hope and miracles. By adding cinnamon into them, you are making them way more special.
Did you know that cinnamon can make you feel warmer? That's why it is so perfect to use this spice on colder days or winter!
This is how you can make these amazing gluten-free cinnamon star cookies
This recipe is so perfect, and beginner-friendly. It only requires one bowl and that's basically it! By mixing all of the ingredients, you can achieve a really amazing dough.
Start by mixing all of the ingredients in a bowl that includes:
- Buckwheat flour
- Rice flour
- Potato starch
- Baking powder
- Baking soda
- A pinch of salt
- Cinnamon
- Sugar
- Vegan butter
- Soy milk
These are our main ingredients. You can create a really nice dough out of them. These cookies will be perfectly sweet, tasty and they will melt on your tongue.
Make sure you are using high-fat vegan butter or vegan margarine or you can also use coconut oil!
When your dough is ready, roll it into 0.3 inches thick. But if you want your cookies thicker and bigger, feel free to change the size and tallness. However, 0.3 inches are the best!
Bake them for 10-12 minutes until they are golden! But make sure you are keeping eye on them because they can burn very easily, just like regular cookies.
When they are out of the oven cool them down and let's prepare icing!
This icing is super easy to make. It is also my staple when decorating Christmas cookies.
For this frosting you will need only two ingredients, which are:
- Powdered sugar
- Soy milk
Just by mixing those two ingredients, you can achieve such a nice and glossy white sugar frosting.
This frosting is so perfect in many recipes including these gluten-free cinnamon star cookies.
When making this icing, keep in mind that you can only add just a little bit of soy milk into the sugar to create the thicker frosting. This way the frosting will be snowy white!
So when your frosting is ready, decorate cookies and enjoy!
You can store them in a jar for up to 7 days in a fridge!

Ingredients
Star cookies
- 1 cup rice flour
- 1 cup buckwheat flour
- 1 tsp baking powder
- 1 tbsp potato starch
- 1/3 tsp baking soda
- 50 g brown sugar
- A pinch of salt
- 1 tsp cinnamon
- 1 cup vegan butter
- 4 tbsp soy milk
Sugar icing
- 1 cup powdered sugar
- 3 tbsp soy milk
Instructions
- In a large bowl combine all the ingredients for star cookies and create a thick dough.
- Roll the dough to 0.3 inches and cut out star shapes.
- Bake them at 170°C or 340F for 10-12 minutes. Keep eye on them because they can easily burn.
- Meanwhile prepare icing, by mixing powdered sugar and soy milk.
- Top each star with frosting and enjoy!
