The texture is fudgy mainly because of mashed dates. They are perfect in chewy recipes. Also, they are perfect as a sugar substitute because they are so sweet with caramel undertones.

The combination of almond flour, mashed dates and blueberries are totally irresestable.

For this recipe you will need only one bowl.

Start by combining dry ingredients, which are:

  • gluten-free oat flour
  • rice flour
  • almond meal
  • baking powder
  • A pinch of salt

Next, add wet ingredients:

  • dates
  • soy milk
  • Juice of half of lemon
  • vanilla

In this recipe, I used dates as a natural sweetener. You will need to mash dates with a fork or add them into a food processor along with a splash of water to create a date paste.

Combine all the ingredients together and create a smooth and creamy batter.

Pour the batter into a baking pan and add blueberries on top. You can use fresh or frozen blueberries as well. Bake for about 40 minutes or until golden. Enjoy!

  • 1/2 cup almond meal
  • 1 tsp baking powder
  • A pinch of salt
  • 3/4 cup dates
  • 2 cups soy milk
  • Juice of half of lemon
  • 1 tsp vanilla
  • 1 cup blueberries

Instructions
 

  • In a large bowl combine dry ingredients, which are gluten-free oat flour, rice flour, almond meal, baking powder, and a pinch of salt.
  • Next, add mashed dates, soy milk, lemon juice, and vanilla. Combine until smooth and creamy batter.
  • Pour the batter into a square pan and top with blueberries. Bake at 180°C (350F) for 40 minutes or until golden. Enjoy!
