Do I need to soak green lentils for soup?
Yes! Absolutely!
Here are some reasons you SHOULD soak the lentils:
- The lentils will be cooked easily. Instead of 1 hour, you can cook them for about 30-20 minutes!
- Less bloating. By soaking them before cooking, you can digest them better!
- Lentils will be softer. This is a fact. You can cook lentils without soaking for 1 hour and sometimes you will find at least a few undercooked lentils. This is why it is so important to soak not only lentils but legumes in general.
These were some tips on why you should soak the lentils before cooking.
If you have digestion problems, you can also cook the lentils separately and then add them to the soup. Just like I did in this recipe!
What kind of lentils are best for soup?
There are many types of lentils you can use for soup.
You can create a soup with green, brown, or even red lentils easily. But keep in mind, the soup will taste different.
Red lentils have a creamy and smooth taste and texture. On the other side, green lentils have a stronger nutty taste and usually don't lose their shape while cooking.
