Peach & blackberry cake


The combination of blackberries and peaches is magnificent. Sweet and sour at the same time and perfectly fluffy that it melts on your tongue. Yes, I'm talking about this delicious peach & blackberry cake. This combination may seem unusual, but trust me it is so delicious.

I was experimenting this time and I added peach jam instead of mashed banana. By doing this I made this cake a little bit more peachy and delicious. I really recommend to try adding peach jam into a batter to see how good it is going to be. However, if you dont have a peach jam, feel free to use apple puree instead.

This cake is gluten-free, vegan and 100% delicious. I tried to combine different types of flours which resulted in the best consistency. This peach & blackberry cake is so fluffy and soft! You will not know it is gluten-free. Make this cake for a summer party or for friends! Everyone will love it. It is a perfect fruit cake with a pinch of sweet and sour. The combination of vanilla cake batter fruits on top is just the best.

Ingredients:

50g millet flour
50g buckwheat flour
50g sorghum flour
1 tsp baking powder
1/3 tsp baking soda
50g cane sugar
100g peach jam
Vanilla extract
120g water
2 flax "eggs" (2 tbsp flax meal soaked in 6 tbsp of water)
Peaches and blackberries

Instructions:

Mix all the dry ingredients into a large bowl, add peach puree, vanilla extract, water, and flax egg. Mix everything together and pour the batter into a pan with parchment paper. Decorate with sliced peaches and blackberries and bake at 160°C for 30 mins. Enjoy
