Poppyseed cake with plums


Plums go so well with poppy seeds. There is something special about this combination. Sweet and juicy plums compliment very nice creamy and pungent poppy seeds. This poppyseed cake with plums is amazing. Flullfy butter with creamy poppy seeds and juicy plums are everything!

Plum cakes are one of my favorites. The taste of a plum in a cake is delicious. When it comes to a batter, I also added grated zucchini so the cake was soft even without the use of a banana or dates. This made the cake even more juicer and not dry. I also cooked the poppy seeds and placed them with a spoon on top along with plums, so an interesting pattern was created on the cake. The last important thing is cinnamon. Don't skip this step. Cinnamon is so important in this recipe. It will give such a delicate and smooth taste. I will also combine all the flavors.

Ingredients:

50g millet flour
50g buckwheat flour
50g rice flour
70g gf oats
2 tbsp tapioca starch (you can use corn or potato starch instead)
2 tsp baking powder
1/2 tsp baking soda
40g cane sugar + cinnamon
200g grated zucchini
200-250g water (depending on consistency)
Vanilla extract
Plums

Poppyseed filling:
200g poppy seeds
200g water
6 dates
almond extract

Instructions: 

In a large bowl combine all the flours, sugar, baking powder, and baking soda, add zucchini, vanilla extract, and water. Stir it well and let it sit for about 10 mins.
Meanwhile, prepare poppy seed filling.
Combine poppy seeds, water, dates, and almond extract and cook it until creamy.
Pour the batter into a baking sheet and spoon poppy seed filling on top along with plums.
Bake at 150°C for about 45-50 mins. Enjoy.
