Simple gluten-free soft tacos recipe
Soft buckwheat tortillas, healthy filling, and creaminess from an avocado. This is how I would describe this simple gluten-free soft tacos recipe. This recipe is perfect for a quick lunch or simple dinner.
These soft tortillas are naturally gluten-free and perfect for different types of filling. However, in this recipe, you can find my favorite filling ingredients, which are rice, beans, corn, tomato, greens, avo, and vegan mayo! The combination of soft tortillas and this extra flavorful and creamy filling is so delicious.
Soft or chrunchy tacos?
Are you a fan of soft or crunchy tacos? I definitely prefer soft tacos. Simply because it is easier to eat, you can fill in many ingredients, and lastly, it is less messy haha!
But don't worry, if you want to try this recipe but you prefer crunchy tacos, just bake them in the oven in your preferable shape and you can make homemade and gluten-free crunchy tacos so easily!
These tortillas are made out of buckwheat flour which is naturally gluten-free and perfect for this recipe. It is so easy to work with buckewheat flour. If you haven't tried buckwheat four yet, I highly recommend you try this out!
Let's make these simple gluten-free soft tacos!
First, we are going to prepare soft tacos, by mixing these ingredients together:
- buckwheat flour
- water
- salt
- garlic powder
These are our main ingredients for soft tortillas. Combine them properly and create a smooth and creamy batter. If the mixture seems watery, just add 1 tbsp of flour and stir until there are no lumps.
The batter should be really creamy and it might looks like a pancake batter.
Preheat your pan on medium-high heat and cook each tortilla from both sides until golden. It should take just a few minutes. They are done really quickly!
When you are done cooking tortillas, now its time to fill them with basically anything you want, but in this recipe, I used these ingredients:
- spinach
- cooked rice
- red kidney beans
- avocado
- corn
- tomato
- vegan mayo
These are my all-time favorite ingredients, so this meal is filling, hearty, and perfectly flavorful. The beans gave it more protein, avocado smoothness and creaminess, and tomato juiciness. Last but not least I topped mine with vegan mayo. I feel like vegan mayo makes everything a lot better.

Simple gluten-free soft tacos recipe
Ingredients
Soft tortillas
- 100 g buckwheat flour
- 150 g water
- 1/3 tsp salt
- 1/3 tsp garlic powder
Filling
- 1 cup spinach
- 1 cup cooked rice
- 1 cup red kidney beans
- 1 avocado
- 1/2 cup corn
- 1 large tomato
- 4 tbsp vegan mayo
Instructions
- First, combine all of the ingredients for soft tortillas, which are buckwheat flour, water, salt, and garlic powder. Create a smooth and creamy batter. If the batter is too liquidy, add 1 tbsp of flour and stir until there are no lumps.
- Cook the soft tacos on a non-stick pan ´from both sides until golden.
- When the tacos tortillas are done, fill them with spinach, rice, beans, corn, sliced tomato, and vegan mayo. Enjoy!
