Soft spooky Halloween cookies - gluten-free and vegan recipe

These spooky Halloween cookies are soft and a little bit chewy with a healthy twist. The cookies by itself don't contain sugar. I sweeten them up with dates that are naturally sweet. This is a perfect recipe for last-minute Halloween treats.
How you can make these cookies?
For the first step, you will need a blender or a food processor. I personally love to use a food processor because it's a lot smaller and less messy.
So, put plant milk and dates into a blender and blend until a smooth consistency.
I love using dates in many recipes, including this one. Dates are so healthy for us and also very delicious. They are naturally sweet, which is perfect because you don't need to use any sugar in the recipes. Dates have almost caramel flavor and fudgy consistency.
In this recipe, I used dried dates. They are usually cheaper than regular ones. But if you have regular dates, feel free to use it. However, I prefer dried dates in baking. Regular dates are so delicious on its own, so it's such a pity to use them in baking!
So the next step is to combine dry ingredients which are flours, baking powder, and a pinch of salt.
Into the dry ingredients add our date mixture, vanilla extract, and melted vegan butter. Those are our ingredients for the spooky Halloween cookies.
Now, create a thick batter and cut circle shapes.
Bake them for 7-9 minutes. I baked mine for 7 minutes but keep eye on them. They can burn easily.

These cookies are pretty much plain without any frosting or decorations. That's why I create unifrm circled shapes, so I can draw some spooky design on them.
I drew simple shapes, such as spider web, pumpkin shape or bats. You don't need to have a super special skil to do that!
For this decoration, I used the vegan chocolate sauce. But you can use traditional melted vegan chocolate. But I created mine by mixing cacao powder, date syrup, and a little bit of soy milk, to make it a little bit more creamy. But this is totally optional. Feel free to use traditional melted chocolate of your choice!

Ingredients
- 1 cup dried dates
- 1/3 cup plant milk
- 1/2 cup gluten-free oat flour
- 1/2 cup rice flour
- 1 tsp baking powder
- A pinch of salt
- 1 tsp vanilla
- 1/3 cup melted vegan butter
Instructions
- First, put dates and plant milk into the blender or food processor and blend until smooth.
- In a large bowl combine dry ingredients, which are oat flour, rice flour, baking powder, and a pinch of salt.
- Add date mixture into the dry ingredients along with vanilla and melted vegan butter. Create a thick dough.
- The last step is to cut circle shapes and bake it for 7 mins at 150°C (300F)
- Let the cookies cool down completely before icing them with chocolate.
- Put the chocolate into a piping bag and create spider webs, pumpkin shapes, or bat shapes. Enjoy!
