The best fall pumpkin cookies - gluten-free & vegan
Pumpkin season is finally here and that means lots of pumpkin recipes! Whether you like sweet or savory pumpkin recipes, I'm pretty sure you will love this one. These are the best fall pumpkin cookies, which are gluten-free & vegan! How awesome is that?
These pumpkin cookies are so delicious. They have a perfect consistency and soft inside. Such a perfect dessert for the cold autumn days.
If you want a fall atmosphere, bake these pumpkin cookies! You can make your whole house smell like a pumpkin pie.

Fall is coming with many changes. The leaves are golden now, the weather is more cloudy and you can find pumpkins everywhere! If you love the fall season, you need to try at least two pumpkin recipes!
Pumpkins on its own are so cute. I'm pretty sure you've seen some pretty decoration in your neighborhood. However, pumpkins are so delicious too! There are plenty of pumpkin recipes out there. If you want something savory, you can make soup or pasta, but if you have a sweet tooth, I'm suggesting you try these cookies!

How you can make these amazing fall pumpkin cookies?
These cookies are not only pretty delicious but also very easy and simple to make! I'm a fan of simple recipes, so don't expect from me to create a complicated recipe haha!
For this recipe, you will need just a one bowl.
Firstly, you need to combine all the dry ingredients, which are gluten-free oat flour, rice flour, salt, cinnamon, nutmeg, and baking powder. These are our dry ingredients.
For the wet ingredients, prepare date syrup, walnut butter, vanilla, coconut oil, pumpkin puree, and soy milk.
The most important part is to combine it all together. I also added some soy milk to the dough, because it was a little bit dry, but this depends on many factors, your dough doesn't have to be dry at all!
Also, I added walnut butter to these pumpkin cookies. I'm rarely using some nut butter, but I wanted these cookies to be full of flavor. So I just put some walnuts into a blender and created walnut butter. Such an easy way of making it. But if you dont have walnut butter, feel free to use almond butter or cashew butter. If will be just fine.

Ingredients
- 100 g gluten-free oat flour
- 50 g rice flour
- A pinch of salt
- 1/2 tsp cinnamon
- 1/3 tsp nutmeg
- 1 tsp baking powder
- 3 tbsp date syrup
- 2 tbsp walnut butter
- 1 tsp vanilla
- 2 tbsp coconut oil
- 1/2 cup pumpkin puree
- 2 tbsp soy milk if needed
Instructions
- In a larger bowl combine all the dry ingredients.
- Next, add in date syrup, walnut butter, vanilla, coconut oil, and lastly pumpkin puree. Make a thick dough. If the dough seems to be a little bit dry, add 2-3 tbsp of soy milk.
- The dough should be thicker, but not hard rock. It should feel nice and soft on hands.
- Finally, shape balls and flatten them in your hands, to create cookie shapes.
- Bake them at 150°C for 15-20 minutes.
- When they are cold, feel free to top each cookie with icing sugar. Enjoy!
