In this recipe I used these ingredients:

  1. Baking powder
  2. Baking soda
  3. Yeast
  4. Psyllium husk

The combination of these ingredients is crucial! Don't skip any of these ingredients, they are equally important to make your bread fluffy and airy at the end.

Baking powder and baking soda are usually helping with rising the dough. But this dough is gluten-free and also dense, so the most perfect ingredient is psyllium husk.

Psyllium husk is completely natural and it has a neutral taste, however, it is known as a water-binding ingredient. It can many any liquid into a jelly-like consistency. But when baking, it will create such a fluffy and airy dough.

Let it prove covered for 1 hour in a warm place.

If you are struggling to make buns with your hands, use water. This way the dough won't be sticky!

Next, let them prove for about 30 minutes before putting them into the oven.

Bake them for about 1 hour.

  • 1 cup buckwheat flour
  • 1 cup rice flour
  • 3 tbsp potato starch or cornstarch
  • 2 tbsp instant yeast
  • 2 tbsp psyllium husk
  • 1 tbsp flax meal
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1 tsp baking powder
  • 2 cups warm water

Instructions
 

  • In a large bowl combine buckwheat flour, rice flour, potato starch, yeast, psyllium, flax meal, salt, sugar, and baking powder. Combine and add warm water.
  • Create a smooth dough. Cover it and let it prove for 1 hour.
  • After one hour, combine the dough and create 6 medium-sized buns. Transfer them onto a baking pan lined with baking powder. Let it rest for about 30 more minutes before baking.
  • Bake at 400F (200°C) for 1 hour. Enjoy!
