In this recipe, I wanted to make a really colorful vegan burger, so I choose basic ingredients and added beet, to make it extraordinary. The beet gave them an amazing texture and such a lovely flavor.

They truly are. Just look at this color! It is incredible. Now, let me show you how you can make these vegan beet & chickpea burger patties easily at home!
Start by adding chickpeas into a blender along with garlic, beetroot, mustard, and seasonings. Blend for a few seconds. It doesn't have to be perfect. As long as you are able to for patties, you are good to go.
Next, for patties using your hands and bake them in the oven for about 20 minutes. Don't forget to sprinkle some sesame seeds on top!
This part is totally optional, but it make these burger patties a lot more tasty.
You can add vegan cheese on top of the patties and bake them again for a few minutes, so the cheese will melt.
Serve with buns, vegan mayo, veggies and enjoy!

Vegan beet & chickpea burger patties
- 500 g cooked chickpeas
- 2 cloves of garlic
- 1/2 cup grated beetroot
- 2 tbsp mustard
- 1/2 tsp garlic powder
- 1/3 tsp cumin
- 1/3 tsp black pepper
- 1 tsp veggie broth powder
- 3 tbsp sesame seeds
- Vegan cheese
- In a large bowl combine cooked chickpeas, minced garlic, beetroot, mustard, and seasonings.
- Use a hand blender or food processor and blend until smooth, but it doesn't have to be perfect.
- When the mixture is dry, feel free to add a splash of water.
- Create patties using your hand and sprinkle some sesame seeds on top.
- Bake patties for 20 minutes on 170°C (350F) then remove from the oven and add vegan cheese (optional) bake for another 5 minutes.
- Serve with hamburger buns, vegan mayo, and veggies. Enjoy!
