However, I love oatmeal so much, but this recipe is whole another level. Baked oats taste like a dessert, so why not create a special breakfast that you can enjoy a little bit more?

For this recipe you will need only one bowl.

Let's start by preparing all of the ingredients.

For these vegan brownie oats you will need:

  • oat flour
  • baking powder
  • cacao powder
  • A pinch of salt
  • water
  • maple syrup
  • vanilla
  • small mashed banana

Yes, I used oat flour instead of whole oats. The reason is that it gets more fluffy and the consistency is so close to the cake batter. So if you want your baked oats to be like a fluffy cake, definitely use oat flour.

You can easily make your own oat flour at home, by blending the oats in a coffee grinder or high-speed blender. Or simply buy oat flour at the store.

So now we need to combine our dry ingredients, which are oat flour, baking powder, cacao powder, and salt.

Next, pour in maple syrup, water, vanilla, and mashed banana. Make sure you are using a smaller banana because if you would use a large banana, the baked oats might be dense and fudgy. So smaller banana it's ok! It will give such an amazing flavor and texture.

Now, combine everyhing together, and create a smooth chocolate batter. It should be really creamy.

Prepare a baking pan and bake the baked oats for about 30 minutes.

When the oats are completely baked, you can decorate them with melted vegan chocolate and some sprinkles, but this is totally optional. Enjoy!

Tip: If you want your baked oats extra chocolatey, you can add some chocolate chips into a batter to make it even richer in flavor.

Ingredients
  

  • 1 1/2 cup oat flour
  • 2 tsp baking powder
  • 4 tbsp cacao powder
  • A pinch of salt
  • 1 1/4 cup water
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • 1 small mashed banana

Instructions
 

  • In a large bowl combine dry ingredients, which are oat flour, baking powder, cacao powder, and salt.
  • Next, add maple syrup, water, vanilla, and mashed banana. Combine until you create a smooth batter. If it's too dry, simply add a few tablespoons of water. You should have a smooth and creamy batter consistency.
  • Lastly, pour the batter into a baking pan and cook for 180°C (400F) for about 30 minutes.
  • When the brownies are completely baked, remove them from the oven and drizzle melted dark chocolate on top. Enjoy!
