Vegan zucchini potato fritters
These vegan zucchini potato fritters are just so delicious. They are very easy to make and the recipe requires only a few ingredients. Vegan zucchini fritters are perfect for a healthy lunch or simple dinner.
This recipe is not only for zucchini lovers. These gluten-free potato zucchini fritters are perfectly flavored, and you can't taste the zucchini at all. The consistency is soft but crunchy from the outside.
The main flavors come from the garlic and undertones of cumin. Since these vegan fritters are fried in a little bit of oil, the potatoes are perfectly flavorful and EXTRA crispy.
Why are my zucchini fritters soggy?
Zucchini contains lots of water. When you grate the zucchini you need to squeeze out the water, so the fritters won't be soggy at the end. This is a crucial step when making these fritters.
Also, when you are making the batter, you need to fry them quickly because you also added salt, which triggers the zucchini, so it produces even more water.
The quick solution might be adding more flour! But don't add too much. Simply add a tablespoon at a time.
