These baked gluten-free jelly donuts, which are vegan, are better than traditional ones. Of course, nothing can be compared to fluffy fried dough, but these are healthier and more fun to make!

Donuts
- 1/2 cup buckwheat flour
- 1/2 cup rice flour
- 1/2 cup cassava flour
- 1 tsp baking powder
- 1/3 tsp baking soda
- 1/2 cup brown sugar
- 1 cup soy milk
- 1/4 cup neutral oil
- 1/2 cup strawberry jam
- 1/2 cup melted dark chocolate
- sprinkles
In a large bowl combine dry ingredients, which are flours, baking powder, and baking soda. Into this mixture add sugar, soy milk, and oil.
Create a smooth and creamy batter.
Grease your donut pan with coconut oil and rice flour. Pour a little bit of batter into the pan and add 1 tbsp of jam. Cover it with more batter. This way you can create jelly-filled donuts.
Bake at 400F (200°C) for about 20 minutes or until golden.
When the donuts are out of the oven and completely cold, decorate them with melted chocolate and sprinkles. Enjoy!
