- 3 large red peppers
- 2 tsp coconut oil
- 2 tbsp minced garlic
- 1/3 cup water
- 1/4 cup soy cream *or vegan heavy cream
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp onion powder
- 1/2 tsp chili flakes
Chop red peppers into large pieces and bake them at 400F (200°C) for 20 minutes.
Meanwhile, boil water and cook the pasta of your choice.
When the peppers are ready, blend them into a smooth consistency with a hand blender.
Preheat the pan and fry the garlic in coconut oil until fragrant. Add red pepper puree, water soy cream, and seasonings. Bring it to a boil and add cooked pasta.
Serve with vegan cheese. Enjoy!
