Method
- Chop red peppers into large pieces and bake them at 400F (200°C) for 20 minutes.
- Meanwhile, boil water and cook the pasta of your choice.
- When the peppers are ready, blend them into a smooth consistency with a hand blender.
- Preheat the pan and fry the garlic in coconut oil until fragrant. Add red pepper puree, water soy cream, and seasonings. Bring it to a boil and add cooked pasta.
- Serve with vegan cheese. Enjoy!
