Ingredients
  

  • 3 large red peppers
  • 2 tsp coconut oil
  • 2 tbsp minced garlic
  • 1/3 cup water
  • 1/4 cup soy cream *or vegan heavy cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp chili flakes

Method
 

  1. Chop red peppers into large pieces and bake them at 400F (200°C) for 20 minutes.
  2. Meanwhile, boil water and cook the pasta of your choice.
  3. When the peppers are ready, blend them into a smooth consistency with a hand blender.
  4. Preheat the pan and fry the garlic in coconut oil until fragrant. Add red pepper puree, water soy cream, and seasonings. Bring it to a boil and add cooked pasta.
  5. Serve with vegan cheese. Enjoy!
