German crescent cookies with powdered sugar

Gluten-free almond crescent cookies - vegan

These little german almond cookies are perfect for Christmas Holidays. Crescent cookies are so special. They are simple cookies with almond flour, butter, and vanilla undertones. The best part is the powdered sugar on top. It looks like little snow cookies.

Ingredients  

  • 1 cup gluten-free oat flour
  • 1/2 cup almond meal
  • 1 tsp baking powder
  • 1 tsp xanthan gum
  • 3 tbsp powdered sugar
  • A pinch of salt
  • 1 cup vegan butter *room temperature
  • 1 tsp vanilla
  • 1/2 cup powdered sugar for dusting *vanilla flavored - OPTIONAL

Instructions 

  • In a large bowl combine oat flour, almond meal, baking powder, xanthan gum, sugar, and a pinch of salt.
  • Next, add vegan butter and combine. You should be able to create a thick but sticky dough.
  • Put it into the fridge for about 30 minutes.
  • After 30 minutes create crescent cookies in your hands. The dough should be easy to work with. If it's sticky use a little bit more flour.
  • Bake them for about 10 minutes at 400F (200°C).
  • When they are done dush them with powdered sugar and enjoy!
