- 1 cup dates
- 1/2 cup water
- 1 tsp almond extract
- 2 tsp coffee
- 1 tsp cacao powder
- 1 cup oat flour
- 1 cup almond meal
- 4 tbsp rice flour *for coating the coffee bean truffles, so they are not sticky
- 1 cup melted vegan chocolate
- 2 tsp coconut oil
In a blender add dates, water, and almond extract and blend until smooth.
Next, transfer the mixture to a large bowl and add oat flour, almond meal, coffee, and cacao powder. Combine until you create a sticky consistency.
Create a coffee bean shape using a spoon. You should be able to create 18 coffee bean truffles. If your mixture is too sticky, add some rice flour onto your hands.
Melt the vegan chocolate with coconut oil and cover each truffle in the chocolate from each side.
Put them into refrigerator for about 1 hour before serving. Enjoy!
