Vegan carrot bliss balls
The combination of carrot, cinnamon, and freshness from lemon juice is incredible. The sweetness in these bliss balls is from dates, which are naturally sweet and perfectly gooey.

Servings 20 bliss balls
- 1/2 cup dates
- 1/3 cup water
- 1/2 lemon
- 1 shredded carrot
- 1 cup almond meal
- 1 cup gluten-free oat flour
- 1 tsp cinnamon
- 1/3 cup shredded coconut
Prepare all of your ingredients, and put dates, water, lemon juice, and shredded carrot into a food processor. Process until smooth and creamy.
Next, add in almond meal, oat flour, and cinnamon. Process a few times. If it's too thick for your blender, just use a spoon for mixing, and create a smooth dough.
When the mixture is done, create small balls in your hands and coat them in shredded coconut. Enjoy!
