In a larger pot add oil and chopped garlic. Sautee until fragrant, then add in veggie stock powder. Fry until slightly brown.
Next add in chopped carrots, potatoes, parsnip, pepper, and whole onion. Cook until the flavors are combined.
Then add water and lovage leaves. Cook for 20 minutes or until veggies are completely cooked.
Lastly season the soup with salt, pepper, and turmeric.
Meanwhile, cook rice noodles according to packaging information. Usually, it takes a few minutes.
Serve with cooked rice noodles and chopped parsley on top. Enjoy!
