Amazing vegan chicken-less noodle soup

The weather is getting colder and the only thing I can think about is a warm and delicious soup. I love soup with lots of different types of veggies. It can create such a nice flavor. In this post, I'm going to show you how you can make an amazing vegan chicken-less noodle soup.

Ingredients
  

  • 2 tbsp oil
  • 2 cloves garlic
  • 2 tbsp veggie stock powder
  • 1 onion
  • 2 large carrots
  • 2 large potatoes
  • 1 parsnip
  • 1 green pepper
  • 1 bunch lovage leaves
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tsp turmeric
  • 6 cups water
  • 1/2 cup chopped parsley
  • 200 g rice noodles

Method
 

  1. In a larger pot add oil and chopped garlic. Sautee until fragrant, then add in veggie stock powder. Fry until slightly brown.
  2. Next add in chopped carrots, potatoes, parsnip, pepper, and whole onion. Cook until the flavors are combined.
  3. Then add water and lovage leaves. Cook for 20 minutes or until veggies are completely cooked.
  4. Lastly season the soup with salt, pepper, and turmeric.
  5. Meanwhile, cook rice noodles according to packaging information. Usually, it takes a few minutes.
  6. Serve with cooked rice noodles and chopped parsley on top. Enjoy!
