The weather is getting colder and the only thing I can think about is a warm and delicious soup. I love soup with lots of different types of veggies. It can create such a nice flavor. In this post, I'm going to show you how you can make an amazing vegan chicken-less noodle soup.
This soup is literally so good. It brings me back to my childhood, but this time it tastes even better.
I cooked this soup with different types of veggies and herbs that gave the soup a really delicious flavor. Also, this soup is not complete without noodles. If you want to cook something warm and delicious, this is the best soup to cook. Enjoy.

When I was young I had no idea that you can make different soup recipes just by combing different ingredients and herbs. This is what gives the soup its flavor. It is so important to know. If you can find the right ingredients, you will fell in love with soups.
Literally! It can be so easy to make delicious soup. You will need just a few ingredients and herbs. Herbs are really important. Without them, the soup has almost no taste. This is why I love using herbs and you should too.
This is how you can make this amazing vegan chicken-less noodle soup
Did I mention, how easy it is to make this soup? No? Well, in that case, cooking this soup is very easy and simple.
Let's start by preparing all of your ingredients, by chopping them. Chop all of your veggies besides onion. I personally don't like small chunks of onion in my soup, however, I like the taste. So here is the trick you can do as well. I simple cook whole onion in the soup.
When you have all ingredients prepared, let's cook!
In a larger pan add a little bit of oil along with some minced garlic. Sautee it until fragrant and then add in veggie stock powder. When the garlic turns slightly brown add in all of your veggies and cooks for a few minutes. By cooking it first with no water, that flavors can be combined very easily.
Now, add in the water, herbs and cook until veggies are completely cooked.
Lastly add in seasonings and you are basically done!
The last step is to cook noodles separately. I cooked rice noodles according to package information. This will take just a few minutes.
Serve this soup with rice noodles and chopped parsley on top. Enjoy!

Amazing vegan chicken-less noodle soup
- 2 tbsp oil
- 2 cloves garlic
- 2 tbsp veggie stock powder
- 1 onion
- 2 large carrots
- 2 large potatoes
- 1 parsnip
- 1 green pepper
- 1 bunch lovage leaves
- 1/2 tsp salt
- 1 tsp black pepper
- 1 tsp turmeric
- 6 cups water
- 1/2 cup chopped parsley
- 200 g rice noodles
- In a larger pot add oil and chopped garlic. Sautee until fragrant, then add in veggie stock powder. Fry until slightly brown.
- Next add in chopped carrots, potatoes, parsnip, pepper, and whole onion. Cook until the flavors are combined.
- Then add water and lovage leaves. Cook for 20 minutes or until veggies are completely cooked.
- Lastly season the soup with salt, pepper, and turmeric.
- Meanwhile, cook rice noodles according to packaging information. Usually, it takes a few minutes.
- Serve with cooked rice noodles and chopped parsley on top. Enjoy!
