Baked cinnamon sugar donuts, gluten-free and vegan recipe

Do you want to bake a healthier version of traditional fried donuts? Well, in that case, you are in the right place. In this recipe, I'm going to show you how you can make these amazing baked cinnamon sugar donuts. The recipe is also gluten-free and vegan, which is pretty awesome!

Ingredients  

Donuts

  • 100 g rice flour
  • 100 g gluten-free oat flour
  • 50 g potato starch
  • 1 tsp baking powder
  • 1/3 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 cup brown sugar
  • 1 mashed banana
  • 3/4 cup soy milk
  • 1/2 cup melted vegan butter
  • 1 tsp vinegar
  • 1 tsp vanilla

Coating

  • 1/2 cup melted vegan butter
  • 1/3 cup brown sugar
  • 1 tsp cinnamon

Instructions 

  • In a large bowl combine dry ingredients, which are rice flour, gluten-free oat flour, potato starch, baking powder, baking soda, brown sugar, and cinnamon.
  • In a separate bowl combine mashed banana, soy milk, melted vegan butter, vinegar, and vanilla extract.
  • Add in wet ingredients into the dry and combine well. The batter should be really fluffy and soft.
  • Grease your donut pan with vegan butter and pour in the prepared batter.
  • Bake at 150°C (300F) for 15 minutes.
  • In a smaller bowl combine sugar and cinnamon and melt the vegan butter.
  • After baking, carefully brush donuts with vegan butter and cover each donut in cinnamon sugar. Enjoy!
