Baked cinnamon sugar donuts - gluten-free and vegan recipe
Do you want to bake a healthier version of traditional fried donuts? Well, in that case, you are in the right place. In this recipe, I'm going to show you how you can make these amazing baked cinnamon sugar donuts. The recipe is also gluten-free and vegan, which is pretty awesome!
Since it is fall, I was inspired by fall vibes and I created these cinnamon sugar donuts, that are just incredible. They are perfectly sweet, fluffy, and soft. This is a delicious fall dessert that you can make in just a few minutes!
Baked or fried donuts?
Traditional donuts are fried, but I just love to bake these donuts in a donut pan. Baked donuts make life a lot easier. It is less messy and you won't smell like a frying oil afterward haha!
And most importantly, baking donuts is a lot healthier than frying the in oil. So if you want to make donuts in a slightly better and healthier version, try this recipe.
So how you can make these delicious baked cinnamon sugar donuts?
First of all, find a larger bowl and combine all the dry ingredients, which are rice flour, gluten-free oat flour, potato starch, baking powder, baking soda, cinnamon, and brown sugar.
These are the dry ingredients, now add in wet ones. I added mashed banana, soy milk, melted vegan butter, vinegar, and vanilla extract.
Mix all of these ingredients together and make such a creamy and soft batter. It should be really fluffy and light.
Then grease your donut baking pan with vegan butter. This step is really important unless you are using a silicone pan. The donuts will not stick to a pan and you can take them out of the pan very easily. However, you can use oil, of you like to.
Next, pour batter into the prepared donut pan. Bake it for about 12-15 mins. I baked mine for 15, but it really depends on your oven. Some ovens bake quickly than others.
After baking, prepare your melted vegan butter, because you are going to brush each donut with it, so the cinnamon sugar will stick to them.
After brushing each donut with melted butter immediately cover them with cinnamon sugar, that you made by mixing cinnamon and brown sugar.
Now, these cinnamon sugar donuts are done. Enjoy them with a cup of coffee, tea, or on its own.

Ingredients
Donuts
- 100 g rice flour
- 100 g gluten-free oat flour
- 50 g potato starch
- 1 tsp baking powder
- 1/3 tsp baking soda
- 1 tsp cinnamon
- 1/2 cup brown sugar
- 1 mashed banana
- 3/4 cup soy milk
- 1/2 cup melted vegan butter
- 1 tsp vinegar
- 1 tsp vanilla
Coating
- 1/2 cup melted vegan butter
- 1/3 cup brown sugar
- 1 tsp cinnamon
Instructions
- In a large bowl combine dry ingredients, which are rice flour, gluten-free oat flour, potato starch, baking powder, baking soda, brown sugar, and cinnamon.
- In a separate bowl combine mashed banana, soy milk, melted vegan butter, vinegar, and vanilla extract.
- Add in wet ingredients into the dry and combine well. The batter should be really fluffy and soft.
- Grease your donut pan with vegan butter and pour in the prepared batter.
- Bake at 150°C (300F) for 15 minutes.
- In a smaller bowl combine sugar and cinnamon and melt the vegan butter.
- After baking, carefully brush donuts with vegan butter and cover each donut in cinnamon sugar. Enjoy!
