There is something special about creamy and warm soup. Especially when the weather is cold and you just wanna something to warm you up. In this case, this creamy broccoli soup is everything.

2 tbsp oil 2 tbsp minced garlic 1 tsp veggie stock powder 2 chopped potatoes 1 head of broccoli * precooked 3 cups water 1/2 cup soy cream * optional 2 tbsp lemon juice 1/2 tsp black pepper 1 tsp salt
In a larger pot fry garlic in a little bit of oil until golden.
Next, add veggie stock powder and cook for a few seconds.
Then add chopped potatoes, pre-cooked broccoli water, and simmer for 15 minutes.
Turn the heat down and blend the soup with a hand blender. Lastly, add soy cream, lemon juice, salt, and black pepper, and enjoy!
