CHICKPEA & VEGETABLE STIR FRY WITH ROOT PUREE

Chickpeas are one of my favorite legumes! You can prepare so many tasty dishes with them. They are mostly known for hummus, which is a traditional spread eaten with flatbread, crackers, or some veggies. But this time I prepared the recipe for chickpea & vegetable stir fry with root puree.

Ingredients
  

Veggie stir fry
  • 1 red bell pepper
  • 1/2 cup chopped celery
  • 1 tbsp coconut oil
  • 1 cup swiss chard
  • 1/3 cup parsley
  • 1 cup cooked chickpeas
  • 1/2 cup basil
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tsp  garlic powder
Root puree
  • 1 carrot
  • 2 parsnips
  • 2 sweet potatoes
  • 1/2 cup plant milk
  • 2 tbsp vegan butter *optional
  • 1/2 tsp salt

Method
 

  1. First cook red bell pepper and celery with coconut oil, add water and cook for 10 mins. Later add swiss chard, parsley, and chickpeas and cook for another 5 minutes. Lastly, add fresh basil and spices.
  2. Meanwhile, chop the root vegetables into small pieces and cook for about 10 minutes in salted water. When the veggies are completely cooked, drain them from the water and add plant milk, butter, and salt.
  3. Serve with fresh veggies and smoked tofu. Enjoy!
