Creamy coconut millet porridge - naturally gluten-free

Millet is just so amazing. You can prepare many delicious dishes with it, including sweet or savory. Cook it with a little bit of salt to make such a tasty side dish or cook it with sweet dates to create this creamy coconut millet porridge, which is naturally gluten-free.

Ingredients
  

Coconut millet porridge
  • 80 g millet
  • 300 g soy milk
  • 5 dates
  • 1 tbsp shredded coconut
  • 1 tsp vanilla
Toppings
  • Berries
  • Shredded coconut

Method
 

  1. First, wash the millet in the water a few times, until the water is clear.
  2. Put the pre washed millet into a pot along with soy milk, dates, and coconut.
  3. Cook for 10 minutes and if needed add a little bit more soy milk, depending on what kind of consistency you want.
  4. Lastly, add in vanilla and blend with a hand mixer until smooth and extra creamy.
  5. Serve with fruits and shredded coconut.
