Creamy coconut millet porridge - naturally gluten-free
Millet is just so amazing. You can prepare many delicious dishes with it, including sweet or savory. Cook it with a little bit of salt to make such a tasty side dish or cook it with sweet dates to create this creamy coconut millet porridge, which is naturally gluten-free.

Coconut millet porridge
- 80 g millet
- 300 g soy milk
- 5 dates
- 1 tbsp shredded coconut
- 1 tsp vanilla
First, wash the millet in the water a few times, until the water is clear.
Put the pre washed millet into a pot along with soy milk, dates, and coconut.
Cook for 10 minutes and if needed add a little bit more soy milk, depending on what kind of consistency you want.
Lastly, add in vanilla and blend with a hand mixer until smooth and extra creamy.
Serve with fruits and shredded coconut.
