Mornings are better with pancakes, but what if I told you, that you can make this amazing double chocolate buckwheat pancakes recipe, which is naturally vegan and gluten-free! Chocolate for breakfast? Sign me in!

Ingredients
  

  • 1/2 cup buckwheat flour
  • 1/3 cup rice flour
  • 1/3 cup cassava flour
  • 2 tsp baking powder
  • 1 tbsp cacao powder
  • 1 cup soy milk
  • 1/2 mashed banana
  • 1 tsp vanilla
  • 4 tbsp date syrup
  • 1/2 cup chopped dark chocolate *or chocolate chips

Method
 

  1. First, combine dry ingredients which are flours, baking powder, salt, and cacao powder.
  2. Next, add in soy milk, mashed banana, vanilla, and date syrup. Create a fluffy batter and lastly add in chopped dark chocolate.
  3. Cook each pancake on medium-high heat from both sides.
  4. Serve with maple syrup and fresh fruit. Enjoy warm.
