- In a large pot fry garlic in coconut oil until golden. Next, add chopped carrot, celery, potatoes. Add veggie stock powder, salt, black pepper, bay leaves, and sautee for about 1 minute.
- Add water, and simmer for about 20 minutes or until veggies are tender. Then add white beans and cook for about 5 minutes.
- Serve with fresh parsley. Enjoy!
