Ingredients
  

  • 2 tbsp coconut oil
  • 2 tsp minced garlic
  • 1/2 cup chopped carrots
  • 1/2 cup chopped celery
  • 1 cup chopped potatoes
  • 1 1/2 cup cooked white beans
  • 1 tsp veggie stock powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 4 cups water * or veggie stock

Method
 

  1. In a large pot fry garlic in coconut oil until golden. Next, add chopped carrot, celery, potatoes. Add veggie stock powder, salt, black pepper, bay leaves, and sautee for about 1 minute.
  2. Add water, and simmer for about 20 minutes or until veggies are tender. Then add white beans and cook for about 5 minutes.
  3. Serve with fresh parsley. Enjoy!
