Extra crispy baked potatoes with vegan mayonnaise

Sometimes it is nice to prepare a comfortable meal that is so easy but so delicious, just like these extra crispy baked potatoes with vegan mayonnaise. There is something special about oven-baked potatoes with some spices and a little bit of oil to make them extra crispy and golden.

Ingredients
  

Crispy potatoes
  • 8 potatoes
  • 5 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/3 tsp onion powder
  • 1/3 tsp paprika
Vegan mayo
  • 1/2 cup soy milk
  • 1 1/2 cup canola oil
  • 1 tsp mustard
  • 1 tsp lemon juice
  • 1/2 tsp black pepper
  • 1/3 tsp salt

Method
 

  1. First, preheat the oven to 175°C (350F). Then chop your potatoes into thin wedges or fries. Season the potatoes with your spices and olive oil.
  2. Next, put the potatoes onto a baking pan and bake for about 35-40 minutes.
  3. Meanwhile, prepare vegan mayo. Put everything into a tall bowl and blend with a hand blender. It should take a few seconds to create a thick mayo.
  4. When the potatoes are done and perfectly crispy, serve with vegan mayo. Enjoy!
