Lastly, add spices and olive oil and bake for about 35-40 minutes. As I mention before every oven is different so you may need to bake them for a little longer or even shorten the baking time. So keep an eye on them. They should be golden brown and crispy from the outside.
Meanwhile, you can prepare the vegan mayo by blending all of your ingredients using a hand blender. This should take a few seconds.

- 8 potatoes
- 5 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/3 tsp onion powder
- 1/3 tsp paprika
Vegan mayo
- 1/2 cup soy milk
- 1 1/2 cup canola oil
- 1 tsp mustard
- 1 tsp lemon juice
- 1/2 tsp black pepper
- 1/3 tsp salt
