Extra fluffy gluten-free and vegan pancakes

Starting a day with pancakes is a whole another level. Especially with these extra fluffy gluten-free and vegan pancakes. If you think that gluten-free pancakes are too complicated to make, keep reading because I'm going to prove you wrong!

Ingredients
  

  • 1 cup rice flour
  • 1/2 cup buckwheat flour
  • 1 tsp baking powder
  • 1/3 tsp salt
  • 1 1/2 cup water
  • 1 mashed banana
  • 1 tsp vinegar
  • 1 tsp flax meal
  • 1 tsp vanilla

Method
 

  1. Mix all the ingredients together and create a creamy batter.
  2. When the batter is ready. Fry pancakes on medium-high heat.
  3. Pancakes should be golden from both sides.
  4. Serve with fruits, vegan yogurt, or maple syrup. Enjoy!

Notes

If you want to have raspberry pancakes, simply add raspberries onto each pancake while frying them on a pan. However don't forget to cover them with the remaining batter, so they won't stick on the pan from the other side.
