These fluffy vegan buckwheat pancakes are super delicious and very easy to make. This recipe requires only one bowl. These pancakes are extra fluffy and perfectly sweet. Serve them for breakfast or even dessert. You just cannot miss this incredibly delicious and easy recipe.

Ingredients
  

  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • A pinch of salt
  • 1 mashed banana
  • 3/4 cup soy milk
  • 2 tbsp lemon juice
  • 1 tsp vanilla

Method
 

  1. Mix all of the ingredients together and create a creamy batter.
  2. Preheat your non-stick pan on medium-high heat and cook each pancake from both sides.
  3. When the pancakes are golden, they are done.
  4. Serve with fruits and creamy cashew butter. Enjoy!
