Gluten-free apple crumble cake

Apple cake supposed to be moist, sweet, and with a hint of cinnamon. This gluten-free apple crumble cake is exactly like that, also with an extra fluffy cake batter. This cake is pure heaven.

Ingredients  

Cake batter

  • 1 cup rice flour
  • 1 cup gluten-free oat flour
  • 2 tsp baking powder
  • A pinch of salt
  • 30 g brown sugar
  • 1 tsp cinnamon
  • 1/2 cup dates
  • 1 mashed banana
  • 1 cup soy milk
  • Juice of half of lemon

Apple filling

  • 2 cups chunky apple sauce
  • 1 tsp cinnamon

Crumble

  • 1/2 cup vegan butter
  • 1/2 cup brown sugar
  • 1/2 cup rice flour

Instructions 

  • First, let's create a cake batter by combining dry ingredients first. In a bowl add flours, baking powder, salt, sugar, and cinnamon. Then add in mashed dates, mashed banana, soy milk, and lemon juice. Combine all of those ingredients and create a smooth and fluffy batter.
  • Bake at 170°C (350F) for 15 minutes only.
  • Next, combine chunky apple sauce with cinnamon and prepare a bowl for a crumble.
  • Create a crumble by combining vegan butter, sugar, and rice flour.
  • After 15 minutes, remove the cake batter out of the oven and top with apple sauce and crumble. Bake for another 30-40 minutes at 150°C (300F).
  • Wait until the cake is completely cool and then dust with powdered sugar on top. Enjoy!
