This cinnamon makes this cake a lot more special. Honestly, I cannot imagine apple cake without cinnamon. This combination goes so well together.

Let's make this amazing gluten-free apple crumble cake

This recipe can be divided into three parts. First one is creating cake batter, the second one is combining apple sauce with cinnamon and the last part is to make the crumble.

Sounds complicating? Don't worry, it is so simple and very easy to make! However, these three steps can make it a lot easier to understand.

First let's make a cake batter. Start by combining dry ingredients first:

  • rice flour
  • gluten-free oat flour
  • baking powder
  • a pinch of salt
  • sugar
  • cinnamon

These are our dry ingredients, now add in wet ones, which are:

  • dates
  • mashed banana
  • soy milk
  • Juice of half of lemon

Combine those ingredients together and create a smooth by creamy batter.

Pour the batter into a square baking pan and bake it for ONLY 15 minutes. This will prevent soggy batter that may cause the apples on top.

Meanwhile, prepare apple filling, by combining apple sauce and cinnamon. In this recipe, I used chunky apple sauce which is so important!

When you've combined chunky apple sauce, now it's time to create a crumble that will go on top of the cake.

In a bowl combine:

  • vegan butter
  • brown sugar
  • rice flour

After 15 minutes remove the cake out of the oven and top with chunky apple sauce and crumble. Put it back in the oven for at least 30 minutes.

This way you can create a really fluffy batter not soggy from apples.

When the gluten-free apple crumble cake is done, cool it completely before cutting and serving. You can dust powdered sugar on top or you can decorate it with sugar icing.

Ingredients
  

Cake batter

  • 1 cup rice flour
  • 1 cup gluten-free oat flour
  • 2 tsp baking powder
  • A pinch of salt
  • 30 g brown sugar
  • 1 tsp cinnamon
  • 1/2 cup dates
  • 1 mashed banana
  • 1 cup soy milk
  • Juice of half of lemon

Apple filling

  • 2 cups chunky apple sauce
  • 1 tsp cinnamon

Crumble

  • 1/2 cup vegan butter
  • 1/2 cup brown sugar
  • 1/2 cup rice flour

Instructions
 

  • First, let's create a cake batter by combining dry ingredients first. In a bowl add flours, baking powder, salt, sugar, and cinnamon. Then add in mashed dates, mashed banana, soy milk, and lemon juice. Combine all of those ingredients and create a smooth and fluffy batter.
  • Bake at 170°C (350F) for 15 minutes only.
  • Next, combine chunky apple sauce with cinnamon and prepare a bowl for a crumble.
  • Create a crumble by combining vegan butter, sugar, and rice flour.
  • After 15 minutes, remove the cake batter out of the oven and top with apple sauce and crumble. Bake for another 30-40 minutes at 150°C (300F).
  • Wait until the cake is completely cool and then dust with powdered sugar on top. Enjoy!
