This banana & carrot bread is very easy to make and the whole family will love it!

Ingredients
  

  • 1 banana
  • 1/2 cup dates
  • 1 cup water
  • 1 flax egg
  • 3/4 cup millet flour
  • 3/4 cup tapioca flour
  • 2 tbsp rice flour
  • 1 tsp baking powder
  • 1/3 tsp baking soda
  • 1 tsp vanilla
  • 1 medium shredded carrot
  • 1/3 cup frozen raspberries *optional
  • 1/2 cup coconut butter

Method
 

  1. Blend banana, dates, and water in your blender.
  2. In a large bowl combine flours, baking powder, baking soda, banana and date mixture, flax meal, and vanilla extract.
  3. Create a smooth batter and add shredded carrot.
  4. Lastly, sprinkle with frozen raspberries on top.
  5. Bake at 180°C (350F) for about 45 mins or until golden brown. Let it cool completely and drizzle with coconut butter. Enjoy!
