Gluten-free banana carrot bread
Who wouldn't like a piece of delicious and soft banana bread? Banana bread is one of those recipes that you just need to bake!
This bread is special because I added grated carrots, which gives the bread not only nice orange color but also other important nutrients great for our body.
I'm sure everyone will love this gluten-free banana carrot bread!
The full recipe is gluten-free, sugar-free, and vegan. It is allergy-free as well. This banana bread is only sweetened with dates which is my favorite type of natural sweetener.
Before baking, I sprinkled the top of the bread with frozen raspberries, but you can easily replace them with any fruit, or simply skip this step. After baking, I poured coconut butter over the bread, which hardened into a hard icing! You can use traditional icing or use coconut butter as well.
The recipe lists various gluten-free flours that make this gluten-free banana carrot bread very special. This bread is so fluffy, moist, and above all so delicious.

To make this recipe you will need only one bowl and a blender!
Start by preparing all of the ingredients.
For this banana carrot bread you will need:
- flax egg
- millet flour
- tapioca flour
- rice flour
- baking powder
- baking soda
- shredded carrot
These are our main ingredients.
In a blender add banana, dates and water. Blend until smooth and creamy.
In a bowl combine flours, baking powder, baking soda, vanilla, banana date mixture, flax egg, and combine.
The batter should be really creamy and smooth.
Lastly, add shredded carrot and combine.
Pour the batter into a baking pan and sprinkle some frozen raspberries on top. This step is totally optional, but it gives such a nice flavor and color to the banana bread.
Bake for about 45 minutes or until golden brown on top.
When the bread is completely cooled down, decorate it with coconut butter. Enjoy!

Gluten-free banana carrot bread
- 1 banana
- 1/2 cup dates
- 1 cup water
- 1 flax egg
- 3/4 cup millet flour
- 3/4 cup tapioca flour
- 2 tbsp rice flour
- 1 tsp baking powder
- 1/3 tsp baking soda
- 1 tsp vanilla
- 1 medium shredded carrot
- 1/3 cup frozen raspberries *optional
- 1/2 cup coconut butter
- Blend banana, dates, and water in your blender.
- In a large bowl combine flours, baking powder, baking soda, banana and date mixture, flax meal, and vanilla extract.
- Create a smooth batter and add shredded carrot.
- Lastly, sprinkle with frozen raspberries on top.
- Bake at 180°C (350F) for about 45 mins or until golden brown. Let it cool completely and drizzle with coconut butter. Enjoy!
