Gluten-free chocolate cookie cups with date frosting

This dessert is so extra. The combination of crunchy cookie cups and creamy date frosting is unbelievably delicious. These gluten-free chocolate cookie cups with date frosting are just so special. The combination of cookie cups and chocolate frosting might be very delicious, but there is one surprise on the inside - strawberry jam. This dessert cannot be better.

Ingredients
  

Cookie cups
  • 100 g rice flour
  • 100 g gluten-free oat flour
  • A pinch of salt
  • 1/3 cup vegan butter
  • 1 tsp vanilla
  • 4 tbsp agave
  • 4 tbsp soy milk
  • 4 tbsp Strawberrry jam
Chocolate date frosting
  • 1/3 cup soy milk
  • 1 cup dates
  • 4 tbsp cacao powder
  • A pinch of salt

Method
 

  1. In a large bowl combine dry ingredients, which are flours and salt.
  2. Next, add in vegan butter, vanilla, agave, and soy milk.
  3. Create a thick dough and let it rest for at least 15 minutes.
  4. Prepare cookie cups forms and grease them with vegan butter, and fill them with the cookie batter.
  5. Bake them at 170°C (350F) for about 10 minutes.
  6. Meanwhile, prepare frosting by blending all of the ingredients together in a high-speed blender.
  7. When everything is done and cookie cups are out of the oven, and cold, fill them with strawberry jam and top with chocolate frosting. Enjoy
