Gluten-free cinnamon star cookies - vegan Christmas recipe

These cinnamon star cookies are perfect for any festive time of the year but mostly Christmas. Cinnamon makes them very fragrant and tasty. The cookies by themselves are a little bit crunchy, sweet, and they melt on the tongue. Just amazing.

Ingredients  

Star cookies

  • 1 cup rice flour
  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 1 tbsp potato starch
  • 1/3 tsp baking soda
  • 50 g brown sugar
  • A pinch of salt
  • 1 tsp cinnamon
  • 1 cup vegan butter
  • 4 tbsp soy milk

Sugar icing

  • 1 cup powdered sugar
  • 3 tbsp soy milk

Instructions 

  • In a large bowl combine all the ingredients for star cookies and create a thick dough.
  • Roll the dough to 0.3 inches and cut out star shapes.
  • Bake them at 170°C or 340F for 10-12 minutes. Keep eye on them because they can easily burn.
  • Meanwhile prepare icing, by mixing powdered sugar and soy milk.
  • Top each star with frosting and enjoy!
