Gingerbread cookies
- 1/2 cup rice flour
- 1/2 cup sorghum flour
- 1/2 cup tapioca flour
- 1 tsp baking powder
- 2 tsp gingerbread spice *
- 1 tsp cacao powder
- 1/3 cup powdered sugar
- 1 tsp xanthan gum
- 1 cup vegan margarine *room temperature
Sugar icing
- 3 tbsp aquafaba
- 3/4 cup powdered sugar
First, combine the dry ingredients, which are flour, baking powder, gingerbread spice, cacao powder, powdered sugar, and xanthan gum.
Next, add margarine and combine with your hands or a stand mixer. The dough should be thick but still soft. Set it aside and wait for about 20 minutes.
After 20 minutes, roll the dough about 0.4 inches and cut out the desired shapes.
Bake at 400F (200°C) for 10-12 minutes.
Meanwhile, prepare sugar icing by whipping aquafaba with a hand mixer until thick. Slowly add in powdered sugar and whisk until shiny and thick icing.
After baking cool down the cookies completely and decorate them with sugar icing. Enjoy!
*You can easily make your own gingerbread spice mix at home by combining:
- 3 tsp cinnamon
- 1 tsp ground cloves
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1 tsp allspice - OPTIONAL
