Ingredients  

Gingerbread cookies

  • 1/2 cup rice flour
  • 1/2 cup sorghum flour
  • 1/2 cup tapioca flour
  • 1 tsp baking powder
  • 2 tsp gingerbread spice *
  • 1 tsp cacao powder
  • 1/3 cup powdered sugar
  • 1 tsp xanthan gum
  • 1 cup vegan margarine *room temperature

Sugar icing

  • 3 tbsp aquafaba
  • 3/4 cup powdered sugar

Instructions 

  • First, combine the dry ingredients, which are flour, baking powder, gingerbread spice, cacao powder, powdered sugar, and xanthan gum.
  • Next, add margarine and combine with your hands or a stand mixer. The dough should be thick but still soft. Set it aside and wait for about 20 minutes.
  • After 20 minutes, roll the dough about 0.4 inches and cut out the desired shapes.
  • Bake at 400F (200°C) for 10-12 minutes.
  • Meanwhile, prepare sugar icing by whipping aquafaba with a hand mixer until thick. Slowly add in powdered sugar and whisk until shiny and thick icing.
  • After baking cool down the cookies completely and decorate them with sugar icing. Enjoy!

Notes

*You can easily make your own gingerbread spice mix at home by combining:
  • 3 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1 tsp allspice - OPTIONAL
