Method
- First, combine the dry ingredients, which are flour, baking powder, gingerbread spice, cacao powder, powdered sugar, and xanthan gum.
- Next, add margarine and combine with your hands or a stand mixer. The dough should be thick but still soft. Set it aside and wait for about 20 minutes.
- After 20 minutes, roll the dough about 0.4 inches and cut out the desired shapes.
- Bake at 400F (200°C) for 10-12 minutes.
- Meanwhile, prepare sugar icing by whipping aquafaba with a hand mixer until thick. Slowly add in powdered sugar and whisk until shiny and thick icing.
- After baking cool down the cookies completely and decorate them with sugar icing. Enjoy!
Notes
*You can easily make your own gingerbread spice mix at home by combining:
- 3 tsp cinnamon
- 1 tsp ground cloves
- 1 tsp ground ginger
- 1/2 tsp ground nutmeg
- 1 tsp allspice - OPTIONAL
