  • 3 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1 tsp allspice - OPTIONAL

You can double the measurements and keep the gingerbread spice in a jar for future usage.

  • Baking powder - To make gingerbread cookies fluffier, you have to add a little bit of baking powder.
  • Gingerbread spice - This is a key when it comes to gingerbread cookies.
  • Cacao powder - Gingerbread spice and cacao powder is such a delicious combination.
  • Powdered sugar - To make the cookies sweeter just add powdered sugar or any other powdered sweetener of your choice. You can use regular white sugar or brown sugar.
  • Xanthan gum - These gluten-free & dairy-free gingerbread cookies have tendencies to fall apart so we need something extra to hold them together. Just add a little bit of xanthan gum and you are good to go.
  • Vegan margarine - What are cookies without butter or margarine? This ingredient combines it all together.

Vegan royal icing egg-free

  • Aquafaba - This is a liquid that you can find in a can of chickpeas. This liquid is perfect for whipping because it has the same consistency as egg whites.
  • Powdered sugar - You can use white or light brown powdered sugar for this step.

POSSIBLE INGREDIENT SUBSTITUTIONS

This recipe is easily customizable. Here are some ideas:

  • You can replace powdered sugar with the powdered sweetener of your choice.
  • Vegan margarine can be replaced with vegan butter.
  • You can replace 1 tsp of baking powder with 1/2 tsp of baking soda.

STEP-BY-STEP INSTRUCTIONS

Step 1: In a large mixing bowl combine dry ingredients first, which are rice flour, sorghum flour, tapioca flour, baking powder, sugar, cacao powder, and xanthan gum. Next, add vegan margarine and create a thick cookie dough. For this step, you can use a stand mixer or simply use your hands. Set the dough aside for about 20 minutes to rest.

Step 2: After 20 minutes roll the dough about 0.4 inches thick and use cookie cutters to cut out ornaments. From this dough, you will be able to create around 20-30 gingerbread cookies depending on your ornaments. You can cut out gingerbread men, stars, hearts, or even snowflakes.

Step 3: Prepare baking sheets and carefully transfer the cookies to a baking pan lined with parchment paper and bake the for about 10 minutes. After baking does not touch them or transfer them from the baking pan. They will be so soft they might break. Wait until they are completely cold and then carefully remove them from the baking pan.

Step 4: Meanwhile, prepare the icing. In a medium-sized bowl whisk aquafaba until it mimics beaten egg whites. Then slowly add powdered sugar and whisk until very fluffy and thick.

  1. Use listed gluten-free flours. Yes, you can replace them, but the consistency will be different. Don't use premade gluten-free flour because the result and consistency might change.
  2. Use room-temperature vegan margarine. You will be able to create smooth dough easily.
  3. Make sure you are giving the dough some rest. It will be smoother and better for cutting out shapes and ornaments.
  4. I don't suggest making a gluten-free gingerbread house from this recipe. This recipe is made for small gluten-free gingerbread cookies, not for large cookies.

Ingredients  

Gingerbread cookies

  • 1/2 cup rice flour
  • 1/2 cup sorghum flour
  • 1/2 cup tapioca flour
  • 1 tsp baking powder
  • 2 tsp gingerbread spice *
  • 1 tsp cacao powder
  • 1/3 cup powdered sugar
  • 1 tsp xanthan gum
  • 1 cup vegan margarine *room temperature

Sugar icing

  • 3 tbsp aquafaba
  • 3/4 cup powdered sugar

Instructions 

  • First, combine the dry ingredients, which are flour, baking powder, gingerbread spice, cacao powder, powdered sugar, and xanthan gum.
  • Next, add margarine and combine with your hands or a stand mixer. The dough should be thick but still soft. Set it aside and wait for about 20 minutes.
  • After 20 minutes, roll the dough about 0.4 inches and cut out the desired shapes.
  • Bake at 400F (200°C) for 10-12 minutes.
  • Meanwhile, prepare sugar icing by whipping aquafaba with a hand mixer until thick. Slowly add in powdered sugar and whisk until shiny and thick icing.
  • After baking cool down the cookies completely and decorate them with sugar icing. Enjoy!

*You can easily make your own gingerbread spice mix at home by combining:
  • 3 tsp cinnamon
  • 1 tsp ground cloves
  • 1 tsp ground ginger
  • 1/2 tsp ground nutmeg
