Ingredients
  

  • 3/4 cup gluten-free oat flour
  • 3/4 cup rice flour
  • 1/2 cup almond meal
  • 1 tsp baking powder
  • A pinch of salt
  • 3/4 cup dates
  • 2 cups soy milk
  • Juice of half of lemon
  • 1 tsp vanilla
  • 1 cup blueberries

Method
 

  1. In a large bowl combine dry ingredients, which are gluten-free oat flour, rice flour, almond meal, baking powder, and a pinch of salt.
  2. Next, add mashed dates, soy milk, lemon juice, and vanilla. Combine until smooth and creamy batter.
  3. Pour the batter into a square pan and top with blueberries. Bake at 180°C (350F) for 40 minutes or until golden. Enjoy!
