- In a large bowl combine dry ingredients, which are gluten-free oat flour, rice flour, almond meal, baking powder, and a pinch of salt.
- Next, add mashed dates, soy milk, lemon juice, and vanilla. Combine until smooth and creamy batter.
- Pour the batter into a square pan and top with blueberries. Bake at 180°C (350F) for 40 minutes or until golden. Enjoy!
