3/4 cup gluten-free oat flour 3/4 cup rice flour 1/2 cup almond meal 1 tsp baking powder A pinch of salt 3/4 cup dates 2 cups soy milk Juice of half of lemon 1 tsp vanilla 1 cup blueberries
In a large bowl combine dry ingredients, which are gluten-free oat flour, rice flour, almond meal, baking powder, and a pinch of salt.
Next, add mashed dates, soy milk, lemon juice, and vanilla. Combine until smooth and creamy batter.
Pour the batter into a square pan and top with blueberries. Bake at 180°C (350F) for 40 minutes or until golden. Enjoy!
