Gluten-free pear crumble muffins

Pear muffins are so delicious. They are full of flavor, juicy and very refreshing. These gluten-free pear crumble muffins are perfect for fall day enjoyed with a cup of tea or coffee.

Ingredients  

Pear muffins

  • 1/3 cup melted vegan butter *or margarine
  • 1/3 cup brown sugar
  • 1 tsp vanilla
  • 1 cup soy milk
  • 1/3 cup sorghum flour
  • 1/3 cup corn flour
  • 3/4 cup gf oat flour
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • 1/3 tsp baking soda
  • A pinch of salt
  • 1/2 cup chopped pear

Cinnamon crumble

  • 2 tbsp vegan butter
  • 5 tbsp gf oat flour
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon

Instructions 

  • Pour the melted butter into a large bowl. Add brown sugar, soy milk, vanilla and combine.
  • Next, add sorghum flour, corn flour, oat flour, xanthan gum, baking powder, baking soda, and a pinch of salt.
  • Create a smooth batter and add chopped pears.
  • Line the muffin pan with paper muffin liners and pour in the batter.
  • In a small bowl combine all the ingredients for the crumble and sprinkle the crumble on top of each muffin.
  • Bake them at 400F (200°C) for about 35 minutes or until golden. Enjoy!
