Muffins are perfect for any occasion. You can bake them for kids, for parties, and even serve them for snacks or breakfast. Muffins are very easy to make and you can add different fruits, chocolate chips, sprinkles or nuts, or even vegetables. Yes, you heard that right, even vegetables. But we are not talking about savory muffins, but about these gluten-free sweet potato muffins.

Ingredients
  

  • 1/2 cup buckwheat flour
  • 1/2 cup rice flour
  • 1/2 cup gluten-free oat flour
  • 1 tsp baking powder
  • 1/2 cup brown sugar
  • 1/2 cup baked sweet potato
  • 1 1/4 cup soy milk
  • Juice of half of lemon
  • 1/2 tsp cinnamon
  • 1/3 cup chocolate chips

Method
 

  1. First, combine dry ingredients, which are buckwheat flour, rice flour, gf oat flour, baking powder, and brown sugar.
  2. Next, add sweet potato, soy milk, lemon juice, and cinnamon. Combine and create a smooth batter.
  3. Lastly, add chocolate chips and carefully stir.
  4. Pour the batter into a muffin pan and cook at 180°C (350F) for 40 minutes. Enjoy!
