Gluten-free sweet potato chocolate chip muffins

Muffins are very easy to make and you can add different fruits, chocolate chips, sprinkles or nuts, or even vegetables. Yes, you heard that right, even vegetables. But we are not talking about savory muffins, but about these gluten-free sweet potato chocolate chip muffins.
These sweet potato muffins are so delicious. They are perfectly sweet, moist and the combination of sweet potatoes and chocolate is totally irresistible.
These muffins are naturally gluten-free and vegan.

Do you like them baked or cooked? I prefer baking, because they are more flavorful and so gooey.
Sweet potatoes are literally so delicious. You can find a variety of sweet potatoes at the market, but in this recipe, I used traditional orange sweet potatoes, also known as yams.
To me, they have a carrot/pumpkin flavor, so these are perfect for baking as well!
In this recipe I baked them firrt and I added the puree into the muffin batter.

For these muffins you will need only one medium sized bowl.
First, combine dry ingredients, which are:
- buckwheat flour
- rice flour
- gluten-free oat flour
- baking powder
- brown sugar
Next, add wet ingreidents:
- baked sweet potato
- soy milk
- juice of half of lemon
Combine those ingredients, and add cinnamon. Create a smooth and creamy batter.
Lastly, add chocolate chips and carefully stir until everything is combined.
Pour the muffin batter into a baking pan and bake for about 40 minutes or until golden brown. Enjoy!
