First, combine all the ingredients for the crust, which are flours, sugar, butter, vanilla, and oat milk. Create a thicker batter and put the dough into a cheesecake pan lined with parchment paper. Use your fingers to push it into the sides. The crust should be at least 1 cm thick.
Bake at 170°C (350F) for 10 minutes.
Meanwhile, let's prepare sweet tofu filling by blending all of the ingredients together. In a blender add tofu, oat milk, vanilla, lemon juice, maple syrup, and cornstarch. Blend until smooth and creamy.
After 10 minutes take the crust out of the oven and pour in the sweet tofu mixture. Put it back into the oven and bake for 1 hour and 10 minutes at 170°C (350F).
When the cheesecake is done, cool it completely before the last step.
Add strawberries into a small pot and cook them until soft. In a bowl combine water, agar, and sugar. Pour it into the strawberries and bring it to a boil. Cook for 30 seconds and turn the heat off immediately.
Cool the mixture before pouring over the cheesecake. It cannot be warm! The agar mixture should be a little bit thicker and creamy when pouring over the cheesecake.
When it's done, put the cheesecake into the fridge preferably overnight. Enjoy!
