This is a basic cheesecake recipe in a gluten-free version but with an amazing finishing touch of juicy strawberries. This cake is perfect for any sunny afternoon.

Cheesecake made out of tofu? No problem!

Tofu is an amazing ingredient. You can prepare excellent dishes with tofu including sweet or savory.

But in this recipe, I blended tofu with sweetener, lemon juice, and vanilla to create an amazing smooth creamy, and delicious flavor.

To make it thicker I also added cornstarch so when you cut the cake it is in uniform shape.

This sweet tofu cheesecake filling is so good. This is an amazing base for any flavors you want. The smoother the tofu you are going to use, the smoother the filling will be. But I used regular firm tofu in this recipe, and it worked just fine!

Let's make this incredible strawberry cheesecake

This recipe is sorted into 3 simple steps. The first one is to bake the base, the second one is to create a tofu filling and the last one is to create a strawberry jelly aka the last layer.

So let's start with the first step.

For the crust you will need:

  • gluten-free oat flour
  • rice flour
  • brown sugar
  • melted vegan butter
  • vanilla
  • oat milk

These are our main ingredients. You will need to combine these together and create the dough. It should be easy to work with and so smooth.

Put the dough into a round baking pan lined with parchment paper. Use your fingers to push it into the sides as well. The crust should be at least 1 cm thick.

Bake the crust for about 10 minutes.

Next step is to make the tofu cheesecake filling.

For this tep you will need:

  • tofu
  • oat milk
  • vanilla
  • maple syrup
  • Juice of 1 lemon
  • cornstarch or potato starch

Put everything into a blender and blend until smooth and creamy. It should be runny but so creamy and delicate. If you like sweeter desserts, feel free to add more sweeteners.

When the base is out of the oven after 10 minutes of baking, simply pour in the tofu mixture and bake for 1 hour and 10 minutes. Since I used a smaller baking pan, the cheesecake is taller, so it needs more time to bake. But if your cheesecake is lower than mine, definitely bake it for 40-45 mins, but keep an eye on it!

When the cheesecake is done, let it cool down completely before the next step.

The last thing is to make a strawberry jelly layer.

For this step you will need:

  • strawberries or frozen strawberries
  • agar
  • brown sugar
  • water

Put strawberries into a pot and cook until soft. Next in a bowl combine water, sugar, and agar. Pout the mixture into the strawberries and bring it to a boil. Cook for about 30 seconds and remove from the heat.

Cool the agar mixture for a few minutes before pouring over the cheesecake. It should be warm but not hot! When it started to be a little bit thicker pour it onto the cheesecake.

Now, the hardest part, which is waiting, because you need to put this cake into a fridge for a least a few hours, preferably overnight!

Ingredients
  

Crust

  • 1 cup gluten-free oat flour
  • 1/2 cup rice flour
  • 50 g brown sugar
  • 50 g melted vegan butter
  • 1 tsp vanilla
  • 1/3 cup oat milk

Tofu filling

  • 400 g tofu
  • 3/4 cup oat milk
  • 2 tsp vanilla
  • 6 tbsp maple syrup
  • Juice of 1 lemon
  • 3 tbsp cornstarch * or potato starch

Strawberry jelly

  • 1 cup strawberries * or frozen strawberries
  • 10 g agar
  • 50 g brown sugar
  • 2 cups water

Instructions
 

  • First, combine all the ingredients for the crust, which are flours, sugar, butter, vanilla, and oat milk. Create a thicker batter and put the dough into a cheesecake pan lined with parchment paper. Use your fingers to push it into the sides. The crust should be at least 1 cm thick.
  • Bake at 170°C (350F) for 10 minutes.
  • Meanwhile, let's prepare sweet tofu filling by blending all of the ingredients together. In a blender add tofu, oat milk, vanilla, lemon juice, maple syrup, and cornstarch. Blend until smooth and creamy.
  • After 10 minutes take the crust out of the oven and pour in the sweet tofu mixture. Put it back into the oven and bake for 1 hour and 10 minutes at 170°C (350F).
  • When the cheesecake is done, cool it completely before the last step.
  • Add strawberries into a small pot and cook them until soft. In a bowl combine water, agar, and sugar. Pour it into the strawberries and bring it to a boil. Cook for 30 seconds and turn the heat off immediately.
  • Cool the mixture before pouring over the cheesecake. It cannot be warm! The agar mixture should be a little bit thicker and creamy when pouring over the cheesecake.
  • When it's done, put the cheesecake into the fridge preferably overnight. Enjoy!
