- 4 tbsp oil
- 2 tbsp minced garlic
- 1 tsp veggie broth powder *optional
- 1/2 tsp salt
- 1/2 black pepper
- 1 tsp paprika
- 1 tsp smoked paprika
- 1/2 tsp chili flakes
- 1/2 cup chopped carrot
- 1/3 cup chopped parsnip
- 3/4 cup chopped potatoes
- 2 cups lentils *cooked
- 2 bay leaves
- 4 cups water
- 7 oz smoked tofu
In a large pot add oil and seasonings. Fry for about 20 seconds and add chopped veggies. Fry for about 1 minute and add lentils, bay leaves, and water.
Bring it to a boil and cover. Simmer for about 20 minutes. After 20 minutes add water or salt if needed.
In a saucepan fry the smoked tofu until golden.
Serve the soup with crispy smoked tofu and chili flakes. Enjoy!
