Method
- In a large pot add oil and seasonings. Fry for about 20 seconds and add chopped veggies. Fry for about 1 minute and add lentils, bay leaves, and water.
- Bring it to a boil and cover. Simmer for about 20 minutes. After 20 minutes add water or salt if needed.
- In a saucepan fry the smoked tofu until golden.
- Serve the soup with crispy smoked tofu and chili flakes. Enjoy!
