Ingredients  

  • 4 tbsp oil
  • 2 tbsp minced garlic
  • 1 tsp veggie broth powder *optional
  • 1/2 tsp salt
  • 1/2 black pepper
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1/2 tsp chili flakes
  • 1/2 cup chopped carrot
  • 1/3 cup chopped parsnip
  • 3/4 cup chopped potatoes
  • 2 cups lentils *cooked
  • 2 bay leaves
  • 4 cups water
  • 7 oz smoked tofu

Instructions 

  • In a large pot add oil and seasonings. Fry for about 20 seconds and add chopped veggies. Fry for about 1 minute and add lentils, bay leaves, and water.
  • Bring it to a boil and cover. Simmer for about 20 minutes. After 20 minutes add water or salt if needed.
  • In a saucepan fry the smoked tofu until golden.
  • Serve the soup with crispy smoked tofu and chili flakes. Enjoy!
