- In a large bowl combine mashed banana and sugar. Add buckwheat flour, baking powder, soy milk, and vanilla. Create a fluffy batter.
- Lastly, add blueberries and carefully combine them into the batter.
- Cook the pancakes on a non-stick pan from both sides on medium-high heat.
- Serve with maple syrup and fresh blueberries. Enjoy!
