Ingredients
  

  • 1 mashed banana
  • 2 tbsp brown sugar
  • 1 cup buckwheat flour
  • 1 tsp baking powder
  • 1/3 cup soy milk
  • 1 tsp vanilla
  • 1/2 cup blueberries

Method
 

  1. In a large bowl combine mashed banana and sugar. Add buckwheat flour, baking powder, soy milk, and vanilla. Create a fluffy batter.
  2. Lastly, add blueberries and carefully combine them into the batter.
  3. Cook the pancakes on a non-stick pan from both sides on medium-high heat.
  4. Serve with maple syrup and fresh blueberries. Enjoy!
